CHAR-GRILLED TUNA FILLETS
PAIRS WELL WITH NOBILO ICON PINOT NOIR
Tuna is a favorite as it goes superbly with Nobilo Icon Marlborough Pinot Noir and only takes a matter of minutes to cook. The smoked bacon, onions and beans are inspired by my time training in France - a simple version of a rustic 'cassoulet'.
DESCRIPTION
Nobilo Icon Marlborough Pinot Noir Char-grilled Tuna fillets, smoky bacon, onion & white bean casserole.
CHAR-GRILLED TUNA FILLETS
6 x 150gr portions tuna fillet steak
1 tsp sweet smoked Spanish paprika
Sea salt
2 Tbsp olive oil
BACON, ONION & WHITE BEAN CASSEROLE
2 Tbsp olive oil
1 cup diced smoked bacon (or substitute with speck: juniper-flavoured ham)
1 large onion sliced
1 cup diced carrots
½ cup peeled garlic cloves
3 cups cooked large white butter beans
1 cup vegetable stock
1 cup diced courgette
2 tsp each finely sliced thyme & rosemary
Sea salt
Freshly ground black pepper
1 cup halved cherry tomatoes
CHAR-GRILLED TUNA FILLETS
Season each tuna steak with paprika, salt and olive oil.
Char-grill on a hot barbeque plate until just rare.
Serve with a bowl of smokey bacon, onion & white bean casserole.
BACON, ONION & WHITE BEAN CASSEROLE
Heat olive oil and fry bacon until golden, add the onions and carrots and cook without colour until soft.
Add garlic, beans, then stock and cook gently for 10 minutes.
Add in courgette and herbs, season and simmer for 5 minutes, lastly add cherry tomatoes.
